Day 30.4 in restaurant Chateau The Grande, Vologda

In this week my last day in CTG.
We could done our planning new main courses even the same time kitchen made 25 customers Banquet.

The best wine that ever taste in Russian..........

was this evening. Bordeaux, Chateau de Genis 2007 in Hotel Comfort and food was real Russian style made
pork ribs. Thank`s to Julian


Days 28-29.4

Planning and planning to Chateau The Grande`s restaurant new recipes to business buffee and a´la carte.
Several salads and main portions for crimps, chicken, fish, vegetables, cheese, smoked salmon, potatoes
and all curry out today.
Tomorrow we will make same quantity different meat main portions from moos, duck, pork, beef and fish.
To every foods also fine hot sauces.
As you see, in Vologda, all my  time table changes... but not bad for me.

27.4 fist day off, maby





Early in the morning breakfast and same time some new ideas in buffee table, what ideas asked me hotel Confort`s manager three days ago.

Morning 10.00 restaurant Kvartal`s manager came and drive me to lunch in her restaurant.

In Kvartal I will working 1-3.5 Kvartal is new place where you can get large lunch buffee, shusi, pizza, a`la carte and professional bartender service.

After lunch in our company came two others Ladys, hotell Sputnik`s manager Svetlana and my familiar Bella.
They have decided drive out of Volgda with us to historical wood house willage Semenkovo.

Day 26.4.


The day in Bulevard restaurants started to modify industrial`s meat- and fish stock powders, taste like own making. O boy it`s really challenge. From my making broths I decided make sauce for flambe stake with potatoes cake and two different salmon soups. They all were in and everybody was glad for that modify influence to sauce and soup`s stock.      

Below, St Sophia`s Cathedral (behind). front part of building was good place to go against for all attacks in Vologda

-style making got fish with yellow cream sauce. Everybody say that it was the best got  than ever tasted, but materials in portion were too expensive to buffee. So I made afternoon two different chicken salad (filled and Oriental style as they wanted) to tasting.
 



Walking back to Hotel Comfort and view of Vologda river side. Next pictures are from old old museum, where was Vologda`s 1500 century`s Monarchs and ships build materials. Vologdas all ship building end very soon because czar wanted bigger ships and Vologda river was too shallow for that.

The second case will curry out tomorrow. Restaurant-Cafeteria Bulevard, (real russian cusine). Open 24/7 and average 1000 custemers / day.
We will make together SaimaaMenu style in  to the buffe, got fish in yellow fish sauce to 150 customers,
if my tasting with got fish goes through in the morning. That`s why I got good running exercise this evening. You will keep your thumbs up tomorrow....

What a excellent service in Vologdas Hotel Comfort, Ten minutes after booking two services lady bring to my room really Russian breakfast, with dark tea and excellent blinis  WOW


Okay, student boys said that no photos for us, because they look so full of painful after healthy OPERATIONS...

23.4.2014 leaving St Petersburg with night train from Ladozhskaya station to Vologda. That night was full of good  sleep after students couching and leaving in Hotel Ambassador. Next photo almost from students....
